- Makgeolli is a cloudy fermented rice or grain drink within the broader takju category, but recipes, filtration, sweetness, carbonation and alcohol strength vary.
- Live or unpasteurized makgeolli can require refrigeration and continue changing in the bottle; pasteurized products generally have different storage and shelf-life characteristics.
- Yakju and cheongju are clearer fermented drinks, while traditional distilled soju is produced through distillation and is distinct from common diluted soju.
- Nuruk is a traditional fermentation starter whose grains and microorganisms vary; its presence does not disclose every ingredient or allergen.
- A regional or heritage name does not by itself prove where every ingredient came from, the production method, quality or current certification.
- Shaking a pressurized bottle without following its label can cause overflow; open and mix only as the producer instructs.
- A tasting does not make driving, cycling or e-scooter use safe.
- Korean inbound duty-free alcohol allowance does not determine what another country or an airline permits on the traveler's onward journey.
Choose the category before choosing a bottle
For a cloudy, lightly sparkling fermented style, inspect makgeolli or another takju. For a clearer fermented drink, inspect yakju or cheongju. For a stronger spirit, distinguish traditional distilled soju from ordinary diluted soju. Fruit wines and other regional products form additional categories rather than one universal traditional drink.
English names are inconsistent, so copy the Korean product name and inspect the legal product type on the label. A menu word such as ‘rice wine’ can hide material differences in filtration, carbonation, sweetness and strength.

Read ABV, volume and ingredients together
Do not assign one alcohol percentage to all makgeolli or soju. Check the current bottle or menu for alcohol by volume and container size, then ask the pour size when ordering by the glass. Sweetness, fruit flavor or milk-like color does not indicate low strength.
Review rice or other grain, sweeteners, fruit, dairy and other declared ingredients when diet or allergy matters. Fermentation starter and shared equipment can add complexity; follow the dedicated dietary guide and decline when a medically important ingredient cannot be verified.

Handle live and pasteurized makgeolli differently
Visit Korea distinguishes live products, in which fermentation can continue, from pasteurized products intended for more stable storage. Follow the exact label for refrigeration, upright transport, expiry and opening. Never copy a shelf-life claim from another brand.
A bottle can build pressure. Keep it cold as instructed, avoid prolonged shaking and open slowly according to the producer's directions. If gentle mixing is recommended, release pressure and mix in the specified sequence rather than treating every bottle alike.

Pair by flavor and actual recipe
Jeon, grilled food, pork, tofu, vegetables and fermented dishes are familiar pairing directions, but they are not compulsory rules. Ask whether the drink is dry or sweet, still or sparkling, light or full-bodied, then choose one food the group can safely share.
Anju can contain pork, shellfish, fish sauce, wheat, soy, sesame, egg or other allergens. Alcohol can also appear in cooking. Confirm the exact dish rather than treating a traditional-liquor venue as suitable for every dietary requirement.

Visit a brewery only with a verified booking and sober route
A brewery, museum or tasting room can explain production better than a generic bar, but tours, English support, reservation rules, age checks and tastings vary. Confirm the exact operator, address, session length, included pours, cancellation and accessibility before a regional detour.
Choose public transport, a legitimate taxi or a sober driver. A rural location, small tasting or food pairing does not make driving safe. If the last bus or taxi supply is uncertain, attend without drinking or arrange the return in advance.

Buy a gift as a transport and customs decision
