Choose one island cluster before choosing dishes
Use Jeju City for the airport side, old downtown, Dongmun and an easy first or last-night meal. Use central Seogwipo and Maeil Olle Market for a south-city route, and Jungmun only when its resort and attraction cluster is already in the plan. Treat Seongsan and the eastern coast, and Aewol, Hallim and the western coast, as separate driving or bus days.
A map can make a coast-to-coast detour look small. Count parking, local buses, taxi availability, weather and the return as well as road distance. One substantial meal and one small snack in the day's existing cluster is stronger than crossing the island for several famous queues.

Use Dongmun for a Jeju City market block

Save the exact Korean market name, entrance and vendor rather than assuming every result marked Dongmun reaches the same aisle. Airport proximity does not make a market stop safe immediately before check-in or boarding.
Choose one purpose: a prepared snack, citrus or packaged gift, or a separately priced seafood purchase. General market hours do not prove that a specific fish counter, noodle shop or night stall is operating. Confirm storage, baggage and the final airport route before buying chilled or odorous food.

Keep Seogwipo, Maeil Olle and Jungmun distinct
Seogwipo Maeil Olle Market is a permanent central-city market with produce, rice cakes, seafood and prepared foods. It is useful with a central Seogwipo walk, but an advertised market day does not establish every seller's hours, night operation or stock.
Jungmun Tourist Complex lies west of central Seogwipo. Choose a Jungmun meal when it supports the resort, museum, waterfall or coast plan; do not label it central Seogwipo for routing. A restaurant near a named attraction may still require a road crossing, hill, parking search or taxi.

Black pork: verify origin, grams and first order
Jeju black pork is commonly grilled in thick cuts and may be served with meljeot, a fermented anchovy sauce. Menus can mix black pork and ordinary pork, belly and neck, or price the first order by 100 grams, a larger fixed weight or a set. The words geun-gogi or black pork do not supply the full order terms.
Before grilling begins, confirm the exact pork, displayed origin, cuts, total grams, minimum first order, price, charcoal or table fee, included sides and extra portions. Ask whether staff grill it and wait until the pork is cooked through. Meljeot can involve fish, salt and fermentation, and the grill creates heat, smoke and cross-contact.

- 멜젓 — fermented anchovy sauce; not vegetarian or fish-allergy safe.

Gogi-guksu, dombe-gogi and momguk all involve pork
Gogi-guksu is a wheat-noodle bowl with pork broth and sliced pork. Dombe-gogi is boiled pork served in slices, often as a shared plate. Momguk uses gulfweed—mom in Jeju dialect—with pork-bone broth and can include pork or offal. A pale broth or seaweed-led English description does not make any of them vegetarian.
Confirm pork parts, offal, broth, noodles, serving size and garnish. Wheat, soy, fish sauce, sesame and shared preparation may matter. A noodle bowl may suit one diner, while dombe-gogi can require a group; ask how many people the listed plate serves before adding it.

Treat hairtail, mackerel and tilefish as different orders
Galchi is hairtail or cutlassfish and may be grilled, braised or offered as a long whole-fish set. Godeungeo is mackerel; okdom is red tilefish. A menu can price one person, one fish, one portion, one set or a weight, and the market purchase, preparation and dining area may be separate businesses.
Point to the exact dish and confirm species, domestic or imported origin as displayed, fresh or frozen status if stated, edible portion, bones, spice, number of diners and complete total. For a market fish, add cleaning, grilling or braising, delivery, table setting, rice and soup charges before the seller starts work.

Choose cooked seafood when raw-food risk is unclear
Jeju menus can include raw mackerel or hairtail, sliced raw fish, abalone, sea urchin and mulhoe. Raw or lightly cooked seafood carries hazards that appearance, spice, citrus, vinegar, alcohol, a live tank or a tourism reputation cannot remove. People who are pregnant, immunocompromised, older or otherwise vulnerable should follow medical advice and choose thoroughly cooked alternatives.
Ask which seafood is in today's serving, whether it is raw, frozen, farmed or wild as relevant, and how it has been kept cold. Consider shellfish allergy and shared tanks, knives, boards and grills. Eat raw seafood promptly, do not carry leftovers around the island and stop eating if handling is unclear.

Use five-day markets only on a verified date
Jeju's permanent markets and five-day markets follow different calendars. Visit Jeju currently describes the Jeju Traditional Five-Day Market on dates ending in 2 or 7 and the Seogwipo Hyangto Five-Day Market on dates ending in 4 or 9. Treat those as planning context and recheck the current market notice for the actual travel date, holiday and weather.
Outdoor vendors can have individual stock, payment and closing times. Confirm the price before taking food, keep raw and cooked purchases separate, and do not carry meat, seafood, dairy or rice products for hours without safe temperature control.

Buy omegi-tteok and citrus for the real storage window
Traditional omegi-tteok is associated with glutinous millet, sweet red bean filling and a red-bean coating, while current products can use rice, mugwort, nuts, sesame, bean powder, chocolate, dairy or other fillings. The word millet does not make a mixed commercial recipe gluten-free or allergy-safe.
Ask for the ingredient and allergen label, production date, room-temperature limit, refrigeration or freezing instructions and best-before date. Fresh rice cake hardens and can spoil; buy only what can be stored safely and declared at the destination. Citrus boxes also need variety, weight, damage and airline or destination import checks.

Traditional liquor needs a label and a sober route
Visit Jeju describes omegisul as a fermented millet-based drink and gosorisul as a distilled product made through a traditional process. They are not interchangeable with makgeolli or ordinary soju, and a heritage name does not reveal the current bottle's alcohol strength, ingredients, additives, volume or availability.
Check the sealed product label, alcohol by volume, serving size, storage, sales conditions and airline or customs limits. A tasting requires a non-driving adult plan. Do not repeat promotional claims that a traditional drink causes less hangover, and never use alcohol as treatment for illness or cold exposure.

Jeju Airport, Jeju Port, Seogwipo, Seongsan and western coastal towns are different endpoints. Strong wind, heavy rain, typhoon conditions, congestion, rental-car return, refueling, parking, baggage and bus transfers can consume the apparent meal buffer.
Keep the final meal near the actual departure route and choose cooked, quickly served food. Recheck the flight or ferry, terminal, rental return location and live weather before leaving a distant coast. Drop a market or cafe stop before risking an assigned departure.
